  • 4 green onions
  • 2 tsp dried oregano
  • 3 garlic cloves
  • 1/2 cup olive oil
  • 2 Tbsp red wine vinegar
  • 2 Tbsp fresh lemon juice
  • 1/2 tsp red pepper flakes
  • 1 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 10 large chicken drumsticks (bone-in and skin-on)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Pat the chicken drumsticks dry with paper towels to ensure crispiness.
  3. In a small bowl, mix together the paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, black pepper, and cayenne (if using).
  4. Place the drumsticks in a large bowl. Drizzle with olive oil and toss to coat evenly.
  5. Sprinkle the seasoning mixture over the drumsticks and rub it in to ensure all sides are coated.
  6. Arrange the drumsticks on the prepared baking sheet, making sure they are not touching.
  7. Bake for 40-45 minutes, flipping halfway through, until the skin is crispy and the internal temperature reaches 165°F (74°C).
  8. For extra crispiness, broil for the last 2-3 minutes, watching carefully to prevent burning.
  9. Let rest for 5 minutes before serving.
