Beef and Vegetable Stir-Fry Bowl is a quick, healthy, and flavorful meal featuring tender strips of beef, crisp vegetables, and a savory stir-fry sauce, all served over steamed rice or noodles. Perfect for a busy weeknight dinner.

Ingredients

– 1/2 cup Low-Sodium Soy Sauce

– 1/4 cup Beef Broth

– 2 tablespoons Honey or Maple Syrup

– 1 tablespoon Rice Vinegar

– 1 tablespoon Toasted Sesame Oil

– 2 teaspoons Cornstarch

– 1.5 lbs Flank Steak or Sirloin Steak

– 1 tablespoon Soy Sauce

– 1 teaspoon Cornstarch

– 2 tablespoons Avocado Oil or other high-heat oil

– 4 cloves Garlic, minced

– 1 tablespoon Fresh Ginger, grated

– 1 large head of Broccoli, cut into bite-sized florets

– 1 Red Bell Pepper, thinly sliced

– 1 Yellow or Orange Bell Pepper, thinly sliced

– 1 medium Yellow Onion, thinly sliced

– 8 oz Cremini Mushrooms, sliced

– 1/2 cup Shredded Carrots

– Cooked Rice, Quinoa, or Noodles for serving

– Toasted Sesame Seeds

– Sliced Green Onions

Instructions

  1. In a small bowl, mix soy sauce, oyster sauce, sesame oil, cornstarch, and water to make the sauce. Set aside.
  2. Heat vegetable oil in a large wok or skillet over high heat. Add beef and stir-fry for 2-3 minutes until browned. Remove and set aside.
  3. In the same skillet, add garlic and ginger, stir-fry for 30 seconds until fragrant.
  4. Add bell pepper, broccoli, carrot, and snap peas. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
  5. Return beef to the skillet. Pour the sauce over and stir to combine. Cook for 1-2 minutes until the sauce thickens.
  6. Serve over steamed rice or noodles. Garnish with green onions and red pepper flakes if desired.

Notes

  • For a gluten-free version, use tamari instead of soy sauce and ensure oyster sauce is gluten-free.
  • Slice the beef against the grain for tenderness.
  • Add other vegetables like mushrooms or baby corn for variety.
