The Best Shrimp Ceviche

A refreshing and flavorful shrimp ceviche that combines fresh shrimp, crunchy vegetables, and bright lime juice, perfect for any gathering.

  • lb. raw shrimp, peeled and deveined
  • 1 cup tomatoes, chopped
  • ½ cup English cucumber, chopped
  • ¼ cup red onion, chopped
  • 1 jalapeño, deseeded & finely chopped
  • ¼ cup cilantro, chopped
  • 1 cup fresh lime juice (about 812 limes)
  • 12 avocados, diced or mashed

Instructions

  1. Chop the shrimp into bite-sized pieces and place them in a 9×13 inch pan.
  2. Pour lime juice over the shrimp to cover completely, cover with saran wrap, and let sit at room temperature for 1 hour, then refrigerate for an additional 1-2 hours.
  3. While the shrimp is marinating, prep the tomatoes, cucumber, red onion, jalapeño, and cilantro, and store in the fridge.
  4. Once the shrimp has marinated, stir in the chopped vegetables and cilantro.
  5. Serve the ceviche in bowls and top with diced or mashed avocado. Enjoy with tortilla chips or on tostada shells.

Notes

For best results, avoid letting the shrimp marinate too long to prevent a rubbery texture. Use fresh ingredients for enhanced flavor.
