Irresistible Olive Garden Chicken Scampi

A homemade version of Olive Garden’s Chicken Scampi that’s easy to prepare and delicious, featuring tender chicken, colorful bell peppers, and a creamy sauce over pasta.

  • 1.52 pounds chicken tenderloins
  • 1 cup all-purpose flour
  • 1 tablespoon Italian seasoning
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 pound angel hair pasta
  • 1 tablespoon olive oil
  • 1 small red onion, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 1 medium yellow bell pepper, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 2 tablespoons butter
  • 35 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Pat the chicken tenderloins dry and set aside. In a shallow bowl, stir together the flour, Italian seasoning, salt, and black pepper.
  2. Dredge the chicken in the seasoned flour and set aside.
  3. In a large skillet, heat 2 tablespoons olive oil over medium heat. Cook the chicken for 3-4 minutes per side until golden and cooked through. Transfer to a plate and cover.
  4. Boil the angel hair pasta in well-salted water until al dente. Drain and reserve 1 cup of pasta water.
  5. Sauté the sliced onion and bell peppers in 1 tablespoon olive oil for 3-4 minutes. Add the butter and garlic, and sauté for an additional 1-2 minutes.
  6. Pour in the white wine, scraping the bottom of the skillet. Simmer for 3-4 minutes, then add the chicken broth and cook for another 2 minutes.
  7. Add the heavy cream and stir. Reduce heat and incorporate the Parmesan cheese until melted.
  8. Combine the cooked pasta with the sauce, adjusting with reserved pasta water as needed.
  9. Serve the pasta with chicken on top, garnishing with parsley and extra Parmesan.
