    • 1 ½ pounds boneless, skinless chicken thighs
    • 2 tablespoons olive oil
    • 2 tablespoons lime juice
    • 2 garlic cloves, chopped
    • 1 teaspoon chili powder
    • 1 teaspoon cumin
    • ½ teaspoon paprika
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • 12 small corn tortillas
    • ½ cup diced white onion
    • ½ cup chopped fresh cilantro
    • 1 lime, cut into wedges
    • Optional toppings: diced avocado, salsa, Cotija cheese, sour cream, hot sauce

Instructions

  1. In a bowl, mix olive oil, garlic, lime juice, and all spices to create marinade.
  2. Add chicken thighs and marinate for at least 30 minutes (or up to 4 hours).
  3. Heat grill or skillet over medium-high heat. Cook chicken for 5-6 minutes per side until internal temperature reaches 165°F.
  4. Let chicken rest 5 minutes, then chop into bite-sized pieces.
  5. Warm tortillas on a dry skillet or directly over gas flame for 15-20 seconds per side.
  6. Assemble tacos with chicken, onions, cilantro, avocado, queso fresco, and salsa.
  7. Serve immediately with lime wedges and jalapeño slices.

Notes

  • For extra flavor, char the edges of the chicken slightly.
  • Double-stack tortillas to prevent tearing.
  • Substitute chicken breast if preferred, but reduce cooking time.
  • Make it vegetarian by using grilled portobello mushrooms instead of chicken.
