Coconut Flour Honey Cookies

Deliciously chewy gluten-free cookies made with coconut flour and sweetened with honey.

Ingredients

  • 1 cup coconut flour
  • 1/2 cup honey
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the coconut flour, baking soda, and salt.
  3. In a separate large bowl, whisk together the honey, melted coconut oil, eggs, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Scoop out portions of the dough and place them onto a baking sheet lined with parchment paper.
  6. With the back of a fork, gently flatten each cookie.
  7. Bake for about 10-12 minutes until the edges are golden brown.
  8. Let the cookies cool on a wire rack for at least 5 minutes before serving.

Notes

Store cookies in an airtight container at room temperature for up to 5 days; can also be refrigerated or frozen.
