Creamy Cajun Chicken Pasta Soup

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup heavy cream
  • 8 oz penne pasta or any short pasta of choice
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Dice the onion and bell peppers, and cube the chicken into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Add chicken, Cajun seasoning, and smoked paprika, sautéing for about 5-7 minutes until golden brown.
  3. Add onions, red and green bell peppers, and garlic. Cook for an additional 3-4 minutes until the onions are translucent.
  4. Pour in the chicken broth and diced tomatoes, and bring to a gentle boil. Reduce heat and let it simmer for 10 minutes.
  5. Add the penne pasta and cook according to package directions (about 8-10 minutes).
  6. Stir in heavy cream and Parmesan cheese, simmer for 2-3 more minutes until heated through.
  7. Season with salt and pepper to taste and serve, garnished with green onions and parsley.

Notes

To adjust thickness, add more broth or water as needed. Can be stored in the fridge for up to 3 days, or frozen for up to 3 months.
