Creamy Dijon Chicken

A comforting dish featuring tender chicken breasts enveloped in a luscious creamy Dijon mustard sauce, perfect for any occasion.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard (optional)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach leaves
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season the chicken breasts with salt, black pepper, and smoked paprika.
  2. Heat the olive oil in a large skillet over medium heat. Sear the chicken for 4-5 minutes on each side until cooked through, then set aside.
  3. Melt the butter in the same skillet, add the onion, and cook until translucent. Add the garlic and sauté for 30 seconds.
  4. Deglaze the pan with chicken broth, simmer for 2-3 minutes.
  5. Stir in the heavy cream, Dijon mustard, whole-grain mustard, and thyme; whisk until smooth.
  6. Simmer the sauce for 3-4 minutes until slightly thickened, seasoning with salt and pepper to taste.
  7. Fold in the grated Parmesan and fresh spinach until the spinach wilts.
  8. Return the chicken to the skillet and spoon sauce over it; simmer on low heat for about 5 minutes.
  9. Garnish with chopped parsley and serve immediately.

Notes

For a dairy-free option, substitute heavy cream with coconut cream and butter with olive oil.
