Irresistibly Crispy Smashed Potatoes

Crispy smashed potatoes that are crunchy on the outside and fluffy on the inside, infused with garlic and olive oil, making them the perfect side dish for any meal.

Ingredients

  • 1.5 lbs Yukon Gold potatoes
  • 1/4 cup extra virgin olive oil
  • 1/4 cup garlic, minced
  • 1/4 cup parsley, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash and scrub potatoes, then place in a large pot and cover with water.
  2. Boil for 15-20 minutes until fork-tender.
  3. Drain potatoes and let cool for 5-10 minutes.
  4. Preheat oven to 450°F (232°C).
  5. Prepare a baking sheet with non-stick spray or parchment paper.
  6. Combine minced garlic and parsley with olive oil in a bowl.
  7. Smash each potato on the baking sheet until about 1/3 inch thick.
  8. Drizzle garlic oil over each smashed potato and season with salt and pepper.
  9. Bake for 15-20 minutes until edges are golden brown and crispy.

Notes

Use fresh garlic for the best flavor. Leftovers can be stored in an airtight container for up to 3 days.
