Earl Grey Lavender Cake

A delightful blend of floral notes and Earl Grey tea in a moist cake, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup whole milk
  • 3 tablespoons Earl Grey tea leaves
  • 2 tablespoons dried lavender
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease/flour a 9-inch round cake pan.
  2. In a small saucepan, warm the milk, steep in the Earl Grey tea leaves and dried lavender for 10 minutes, and strain.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well between additions.
  5. Stir in the cooled milk and vanilla extract.
  6. In a separate bowl, whisk the flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  8. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve warm with tea.

Notes

Use high-quality tea and lavender for the best flavor. Can be served with lemon curd or whipped cream.
