Easy Sweet Potato Egg Casserole

A comforting and easy-to-make casserole combining sweet potatoes, eggs, and cheese, perfect for breakfast or brunch.

  • 2 medium sweet potatoes, peeled and diced
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the chopped onion and bell pepper in olive oil over medium heat for 5-7 minutes until softened.
  3. In a large bowl, whisk together the eggs and milk, seasoning with salt and pepper.
  4. Spread the diced sweet potatoes in a greased baking dish.
  5. Pour the sautéed vegetables over the sweet potatoes.
  6. Pour the egg mixture evenly over the vegetables.
  7. Sprinkle shredded cheese generously on top.
  8. Bake for 30-40 minutes, ensuring the eggs are set and the top is golden.
  9. Let cool for 10 minutes before serving.

Notes
