Elegant Smoked Tomato Soup

A comforting and flavorful smoked tomato soup that elevates an ordinary dish into a gourmet experience.

  • 2 pounds ripe tomatoes (Roma or vine-ripened)
  • 1 onion, chopped (yellow or sweet)
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (low-sodium)
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream (or plant-based cream)
  • Fresh basil, for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the tomatoes and place them cut-side up on the baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for about 30 minutes until caramelized.
  3. In a large pot, heat olive oil over medium heat, add chopped onion, and sauté for 5-7 minutes until translucent. Add minced garlic and cook for 1-2 minutes until fragrant.
  4. Add roasted tomatoes, vegetable broth, and smoked paprika to the pot. Bring to a gentle simmer and cook for 20 minutes.
  5. Using an immersion blender, puree the soup until smooth, about 2-3 minutes.
  6. Return the soup to the pot, stir in the heavy cream, and simmer for another 2-3 minutes. Adjust seasoning with salt and pepper.
  7. Serve in bowls garnished with fresh basil leaves and a drizzle of olive oil if desired.

Notes

Store leftovers in an airtight container for up to 5 days or freeze for up to 3 months. For a vegan option, use coconut milk instead of heavy cream.
