Fantasy Fudge

A classic, incredibly smooth and creamy chocolate fudge recipe made with simple ingredients like chocolate chips, marshmallow creme, and nuts. This no-fail candy is a holiday favorite.

  • 3 cups granulated sugar
  • 3/4 cup unsalted butter
  • 2/3 cup evaporated milk
  • 1 (12 oz) package semi-sweet chocolate chips
  • 1 (7 oz) jar marshmallow crème
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans (optional)

Instructions

  1. Line a 9×9 inch baking pan with aluminum foil, leaving an overhang on two sides for easy removal. Grease the foil lightly with butter.
  2. In a large, heavy-bottomed saucepan, combine the sugar, butter, and evaporated milk. Bring to a full rolling boil over medium heat, stirring constantly.
  3. Once boiling, continue to boil for 5 minutes, stirring continuously to prevent scorching.
  4. Remove the pan from the heat. Immediately add the chocolate chips and stir until melted and smooth.
  5. Add the marshmallow creme and vanilla extract, and stir until completely combined. If using, fold in the chopped nuts.
  6. Pour the mixture immediately into the prepared pan and spread evenly.
  7. Let the fudge cool completely at room temperature until set, about 2-4 hours. Alternatively, refrigerate to set faster.
  8. Once set, use the foil overhang to lift the fudge out of the pan. Peel off the foil and cut into 1-inch squares.

Notes

  • Use a candy thermometer for precision; the mixture should reach 234°F–240°F (112°C–116°C), the soft-ball stage, after boiling for 5 minutes.
  • Stirring constantly during the boiling stage is crucial to prevent the sugar from crystallizing and the mixture from burning.
  • For perfectly smooth fudge, ensure the chocolate chips are fully melted before adding the next ingredients.
  • Store fudge in an airtight container at room temperature for up to 2 weeks. It can also be frozen for longer storage.
