Fast Creamy Sun-Dried Tomato Gnocchi

A quick and comforting pasta dish featuring gnocchi with a creamy sun-dried tomato sauce and fresh spinach.

  • 1 tablespoon Olive Oil
  • 34 cloves Garlic, minced
  • 1/2 cup Sun-Dried Tomatoes in oil, drained and chopped
  • 1 teaspoon Dried Italian Seasoning
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • 1 (16–18 ounce) package Shelf-Stable or Refrigerated Gnocchi
  • 1 cup Vegetable Broth
  • 1 cup Heavy Cream or Half-and-Half
  • 1/4 cup Grated Parmesan Cheese, plus more for serving
  • 5 ounces Fresh Spinach
  • Salt and Black Pepper to taste

Instructions

  1. Boil the Gnocchi: Bring a large pot of salted water to a rolling boil. Cook the gnocchi according to package directions until they float—this should take about 2-3 minutes. Scoop them out with a slotted spoon and set them aside.
  2. Sauté the Garlic: In a large skillet over medium heat, heat your olive oil. Add the minced garlic and sauté until fragrant—this should take around 30-60 seconds.
  3. Add Flavors: Stir in the chopped sun-dried tomatoes, dried Italian seasoning, and optional red pepper flakes. Sauté for 1 minute until everything is well-combined and aromatic.
  4. Pour in the Broth: Add vegetable broth to the skillet and scrap any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes.
  5. Creamy Dreams: Lower your heat and slowly stir in the heavy cream, being cautious not to boil. You want a gentle simmer.
  6. Melt in the Cheese: Stir in the grated Parmesan cheese until it melts smoothly into the sauce.
  7. Combine with Gnocchi and Spinach: Add your cooked gnocchi and fresh spinach to the skillet. Stir until the spinach wilts down, around 1-2 minutes.
  8. Season & Serve: Season with salt and black pepper to taste. Serve immediately, generously topped with extra Parmesan cheese.

Notes

For an even richer experience, consider adding a dollop of mascarpone or a splash of white wine with the vegetable broth.
