Irresistible Gingerbread Cinnamon Rolls

Freshly baked gingerbread cinnamon rolls with icing on top

A festive twist on the classic cinnamon roll, packed with the warm flavors of ginger and cinnamon and topped with creamy frosting.

Ingredients

  • 1 cup Milk (warmed to 110°F)
  • 2 1/4 tsp Active dry yeast (1 packet or 11 grams)
  • 2 Large eggs (room temperature)
  • 4 3/4 cups All-purpose flour
  • 1 tsp Salt
  • 1/4 cup White granulated sugar
  • 10 TBSP Unsalted butter (room temperature and cubed)
  • 1/4 cup Molasses
  • 1 1/2 tsp Ground cinnamon
  • 1 1/2 tsp Ground ginger
  • 1/2 cup Unsalted butter (room temperature) for the filling
  • 3/4 cup Brown sugar (packed light or dark)
  • 1 TBSP Ground cinnamon for the filling
  • 2 tsp Ground ginger for the filling
  • 1 TBSP Molasses for the filling
  • 4 oz Cream cheese (room temperature) for icing
  • 4 TBSP Browned butter (Measure out 4 TBSP of butter and brown it)
  • 1 cup Powdered sugar for icing
  • 1 tsp Pure vanilla extract for icing
  • 12 TBSP Milk (to achieve desired consistency for icing)

Instructions

  1. In a small bowl, combine the warm milk and active dry yeast, and let sit for about 5 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour, salt, and sugar. Create a well in the center and add the eggs, molasses, and yeast mixture.
  3. Mix until a loose dough forms, then add cubed butter. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1-2 hours or until doubled in size.
  5. While dough rises, prepare the filling by mixing together the room temperature butter, brown sugar, ground cinnamon, ground ginger, and molasses until fluffy.
  6. Once dough has risen, punch it down and roll it into a large rectangle (about 1/4 inch thick).
  7. Spread the filling evenly over the rolled-out dough.
  8. Starting from one edge, roll the dough tightly and seal the edge.
  9. Cut the rolled dough into 12 equally sized pieces and place in greased baking pans.
  10. Cover and let rise again for about 30-45 minutes until puffed.
  11. Preheat the oven to 350°F (175°C).
  12. Bake for 25-30 minutes until golden brown.
  13. While rolls bake, make the icing by combining cream cheese, browned butter, powdered sugar, vanilla extract, and milk.
