Greek Tortilla Pinwheels

Delicious and customizable Greek tortilla pinwheels filled with creamy feta, Greek yogurt, and fresh vegetables, perfect for any gathering.

Ingredients

  • 1 large tortilla or wrap (whole wheat or spinach)
  • 3 tablespoons Greek yogurt
  • 1.75 ounces feta cheese, crumbled
  • 1 medium tomato, chopped into small cubes
  • 0.2 cucumber, cubed
  • 5 black olives, chopped
  • 0.25 green bell pepper, cubed
  • 0.25 teaspoon dried oregano
  • Black pepper to taste
  • Cocktail sticks (optional)

Instructions

  1. Gather all your ingredients on a clean board.
  2. Spread the feta cheese and yogurt mixture evenly over the tortilla.
  3. Evenly distribute the chopped tomato, cucumber, green bell pepper, and olives over the spread; sprinkle with oregano and black pepper.
  4. Tightly roll the tortilla up, tucking in the filling as you go.
  5. Wrap the rolled tortilla in plastic wrap and refrigerate for 30 minutes.
  6. Unwrap and slice into about 8 even rounds, then serve on a platter.

Notes

Store leftovers in an airtight container for up to 3 days. Can be frozen; thaw in the fridge before serving.
