Ground Beef Orzo

A cozy one-pot dish featuring seasoned ground beef and tender orzo, enveloped in a rich broth and finished with creamy Parmesan cheese.

  • 1 lb lean ground beef
  • 1 cup orzo pasta
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 cups beef or vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onions are translucent and fragrant.
  2. Add the ground beef to the pan. Break it apart as it cooks, letting it brown completely for about 5-7 minutes. Drain any excess grease if necessary.
  3. Stir in the tomato paste, paprika, and Italian seasoning. Let it cook for an additional 2 minutes until fragrant.
  4. Pour in the broth and stir in the rinsed orzo pasta. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 10-12 minutes, stirring halfway through.
  5. Once the orzo is tender, remove from heat and stir in grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. You can also freeze portions for up to 2-3 months.
