Hobo Casserole

Delicious hobo casserole dish with meat, vegetables, and cheese baked together.

A hearty and comforting casserole featuring layers of seasoned ground beef, sliced potatoes, and creamy mushroom soup, topped with melted cheddar cheese. This budget-friendly dish is perfect for family dinners and evokes nostalgic, home-cooked flavors.

  • 1 pound ground beef (80/20 recommended)
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 medium potatoes, thinly sliced (Yukon Gold or russet)
  • 1 can (10.5 ounces) cream of mushroom soup
  • ½ cup whole milk
  • 1 ½ cups shredded cheddar cheese
  • ½ teaspoon paprika (optional)
  • 1 tablespoon butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish
  2. Brown ground beef with onion, garlic powder, onion powder, salt, and pepper in a skillet; drain excess fat
  3. Layer half the sliced potatoes in baking dish, followed by half the beef mixture
  4. Drizzle half the cream of mushroom soup and some milk over the layers
  5. Repeat layers with remaining potatoes, beef mixture, soup, and milk
  6. Top with shredded cheddar cheese, drizzle with melted butter, and sprinkle with paprika
  7. Cover with foil and bake for 45 minutes
  8. Remove foil and bake 15-20 minutes more until potatoes are tender and cheese is bubbly

Notes

  • Slice potatoes evenly for uniform cooking
  • Can be prepared a day ahead and refrigerated before baking
  • Leftovers can be refrigerated for 4 days or frozen for 3 months
  • For gluten-free version, use gluten-free cream of mushroom soup
  • Ground turkey or plant-based protein can substitute for beef
