Marinated Cherry Tomatoes

Bright and flavorful marinated cherry tomatoes that burst with freshness, enhanced with garlic, herbs, and a tangy-sweet dressing. Perfect as a side dish, salad topper, or bruschetta accompaniment.

Ingredients

  • 2 cups cherry tomatoes, halved
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 garlic clove, minced
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. In a large bowl, whisk together olive oil, balsamic vinegar, honey, garlic, salt, and pepper.
  2. Add halved cherry tomatoes to the dressing and gently toss to coat.
  3. Fold in fresh basil and thyme until evenly distributed.
  4. Cover and refrigerate for at least 30 minutes (up to 4 hours) to allow flavors to meld.
  5. Before serving, taste and adjust seasoning if needed. Sprinkle with red pepper flakes for heat if desired.
  6. Serve chilled or at room temperature with a slotted spoon.

Notes

  • For best texture, marinate no longer than 4 hours as tomatoes will soften.
  • Add 1/4 cup diced red onion or shallots for extra crunch.
  • Substitute white wine vinegar for balsamic for a lighter flavor.
  • Leftover marinade makes a delicious salad dressing.
