Moist Christmas Cranberry Bars

Soft, moist bars bursting with tangy cranberries, ideal for holiday gatherings.

Ingredients

  • 1 cup fresh cranberries
  • 1 cup sugar
  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, combine the cranberries and sugar, and set aside.
  3. Cream together the softened butter and sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until well combined.
  5. In another bowl, whisk together flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the cranberries and nuts, if using.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  10. Allow to cool completely before cutting into squares and dust with powdered sugar before serving.

Notes

Store in an airtight container for up to 3 days at room temperature or freeze for longer storage.
