Mummy Veggie Wraps filled with fresh vegetables and wrapped in tortilla

Delightful Halloween-themed veggie wraps that are healthy, customizable, and fun to make.

Ingredients

  • 4 to 6 large flour tortillas
  • 8 ounces cream cheese, softened
  • 1 cup shredded carrots
  • 1 cup julienned bell peppers, mixed colors
  • 1 cup julienned cucumber
  • 1 cup packed baby spinach
  • 1/4 cup black olives, pitted
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • Salt and black pepper, to taste

Instructions

  1. In a medium bowl, mix the softened cream cheese, garlic powder, onion powder, salt, and pepper until completely smooth.
  2. Wash and slice your veggies, keeping everything ready to go.
  3. Spread the cream cheese mixture over a tortilla, leaving a half-inch border around the edges.
  4. Layer with shredded carrots, julienned bell peppers, cucumbers, and spinach starting from the bottom third of the tortilla.
  5. Roll the tortilla tightly, tucking in the filling as you go and sealing it with the cream cheese edge.
  6. Wrap the rolled tortilla in plastic wrap and refrigerate for 30 to 60 minutes.
  7. Unwrap and slice into 1-inch thick pinwheels.
