3/4 tsp salt
1/4 tsp pepper
30g unsalted butter
200g mushrooms, sliced 3mm thick
2 garlic cloves, finely minced
1/2 tsp thyme leaves
2 cups baby spinach
80g mozzarella, sliced or other melting cheese
1 tbsp olive oil
Instructions
Prepare the Chicken Breast: Carefully slice the chicken breast horizontally to create a pocket for your stuffing.
Sauté the Filling: In a skillet, melt the butter over medium heat, add mushrooms and garlic, seasoning with salt, pepper, and thyme. Sauté until softened (5-7 mins), sprinkle in baby spinach until wilted.
