  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 30g unsalted butter
  • 200g mushrooms, sliced 3mm thick
  • 2 garlic cloves, finely minced
  • 1/2 tsp thyme leaves
  • 2 cups baby spinach
  • 80g mozzarella, sliced or other melting cheese
  • 1 tbsp olive oil

Instructions

  1. Prepare the Chicken Breast: Carefully slice the chicken breast horizontally to create a pocket for your stuffing.
  2. Sauté the Filling: In a skillet, melt the butter over medium heat, add mushrooms and garlic, seasoning with salt, pepper, and thyme. Sauté until softened (5-7 mins), sprinkle in baby spinach until wilted.
  3. Assemble the Filling: Fill the chicken pockets generously with the sautéed mixture.
  4. Initial Preparation: Preheat oven to 190°C (375°F), heat olive oil in the same skillet over medium-high heat.
  5. Ingredient Assembly: Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  6. Cooking and Finishing Touches: Transfer to a baking dish, top with mozzarella and bake uncovered for 20-25 minutes until cheese is melted and chicken reaches 75°C (165°F).
