One Pot Chicken Broccoli Rice Casserole

A creamy, comforting one-pot meal with tender chicken, broccoli, and rice in a cheesy sauce – ready in under 45 minutes with minimal cleanup!

2 Boneless Skinless Chicken Breasts

2 tablespoons Extra Virgin Olive Oil

1 Onion shallots for a sweeter flavor!

3 cloves of Garlic

1 cup Long Grain Rice texture.

1 1/2 cups Milk

1 cup Chicken Broth

1/2 teaspoon Sea Salt

1/8 teaspoon Black Pepper

4 cups Fresh Broccoli (chopped; about 1/2 pound)

1/2 cup Shredded Cheddar Cheese (4 ounces or more as needed)

Chopped Fresh Parsley for garnish

Instructions

  1. In large deep skillet or Dutch oven, heat oil over medium-high heat. Add chicken and cook 5-6 minutes until browned. Remove and set aside.
  2. In same pot, sauté onion 3 minutes until soft. Add garlic and cook 30 seconds until fragrant.
  3. Stir in rice, broth, salt, pepper, thyme and paprika. Bring to boil.
  4. Reduce heat to low, cover and simmer 15 minutes.
  5. Stir in broccoli and cooked chicken. Cover and cook 5 more minutes.
  6. Remove from heat. Stir in cheeses and cream until melted and creamy.
  7. Garnish with parsley if desired. Serve hot.

Notes

  • For extra flavor: use 1/2 cup dry white wine and reduce broth by 1/2 cup
  • Make ahead: Reheats well with splash of milk to loosen sauce
  • Vegetarian option: Substitute chicken with mushrooms and use vegetable broth
  • Freezes well for up to 3 months
