Crispy Roasted Potatoes with Creamy Baked Feta and Garlic

  • 2 pounds waxy potatoes (like Yukon Gold or red potatoes)
  • 8 ounces feta cheese, crumbled or in blocks
  • 56 cloves of fresh garlic
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • Salt and black pepper, to taste
  • Fresh rosemary or thyme (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the potatoes into 1-inch pieces and place in a large bowl.
  3. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Add the whole garlic cloves to the potatoes.
  6. Bake for 25-30 minutes, shaking the pan halfway through.
  7. Add the feta cheese for the last 10 minutes of baking.
  8. Once out of the oven, drizzle with honey and sprinkle with fresh herbs.

Notes

For the best melting experience, ensure feta is at room temperature before baking. Don’t overcrowd the baking sheet for extra crispiness.
