Roasted Red Pepper Hummus Cups

Delightful Roasted Red Pepper Hummus Cups are a flavorful, easy-to-make appetizer that combines crispy wonton wrappers with creamy roasted red pepper hummus.

  • 24 square wonton wrappers
  • 2 tablespoons olive oil
  • One 15-ounce can chickpeas, rinsed and drained
  • 1 cup jarred roasted red peppers, drained
  • 1/4 cup tahini
  • 3 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic, peeled and roughly chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • Optional garnishes: Crumbled feta cheese, chopped fresh parsley, a sprinkle of paprika, toasted pine nuts, Kalamata olives

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with olive oil.
  2. Press the wonton wrappers gently into the muffin cups to form small cups, brushing the tops lightly with olive oil.
  3. Bake for 8-10 minutes until golden brown and crisp.
  4. Let the cups cool on a wire rack.
  5. In a food processor, blend together chickpeas, roasted red peppers, tahini, lemon juice, garlic, cumin, and salt until smooth.
  6. With the processor running, slowly add olive oil until achieving a creamy texture.
  7. Taste and adjust the seasonings as needed.
  8. Fill the cooled wonton cups generously with hummus and add toppings as desired.
  9. Serve immediately and enjoy!

Notes

These cups can be made ahead of time; fill them just before serving to maintain the crispness of the wonton wrappers.
