Ingredients

  • 1 lb salmon fillets, skin removed and cubed
  • 2 cups diced potatoes
  • 1 cup corn (fresh or frozen)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or seafood broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh dill for garnish (optional)

Instructions

  1. Melt butter in large pot, sauté onion and garlic until softened
  2. Add potatoes and broth, simmer until potatoes are tender
  3. Add salmon and corn, cook 5 minutes until salmon flakes easily
  4. Stir in heavy cream, season with salt and pepper
  5. Heat through 2-3 minutes, garnish with dill
  6. Serve hot
