Irresistible Speculoos Cookies

Delightful spiced cookies that evoke cozy holiday memories, perfect with coffee or as a delightful treat.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt. Set aside.
  3. In another bowl, beat the softened butter and both sugars until creamy and light, about 3-4 minutes.
  4. Add the egg and vanilla extract. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture. Mix on low speed until just combined.
  6. Roll the dough into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
  7. Flatten each ball slightly with a fork or your fingers.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use high-quality spices. Store in an airtight container for up to a week.
