Strawberry Cookies

Soft, cake-like strawberry cookies with fresh strawberry pieces and a sweet glaze. These pink-hued treats are perfect for spring and summer baking!

Cookies:

  • 2 ¼ cups (280g) all-purpose flour

  • ½ tsp baking powder

  • ¼ tsp salt

  • ½ cup (115g) unsalted butter, softened

  • ¾ cup (150g) granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • ½ cup (75g) finely diced fresh strawberries

  • 12 tbsp strawberry juice (from diced berries)

  • 12 drops red food coloring (optional)

Glaze:

  • 1 cup (120g) powdered sugar

  • 12 tbsp strawberry purée

  • ½ tsp lemon juice

Garnish:

  • Freeze-dried strawberry crumbs

  • White chocolate drizzle (optional)

Instructions

  1. Prep strawberries: Dice strawberries and let drain in sieve over bowl (reserve juice).
  2. Make dough: Whisk flour, baking powder, and salt. In another bowl, cream butter and sugar until light. Beat in egg, vanilla, and 1 tbsp strawberry juice. Gradually mix in dry ingredients. Fold in strawberries.
  3. Chill: Cover and refrigerate dough 1 hour (prevents spreading).
  4. Bake: Scoop 1.5-tbsp portions onto parchment-lined sheets. Bake at 350°F (175°C) for 10-12 mins until edges are just golden.
  5. Glaze: Whisk powdered sugar, strawberry puree, and lemon juice until smooth. Drizzle over cooled cookies.
  6. Garnish: Sprinkle with freeze-dried strawberry crumbs while glaze is wet.

Notes

  • Berry swaps: Can use frozen strawberries (thaw and drain well).
  • Storage: Keep in airtight container with parchment between layers.
  • Flavor boost: Add 1/4 tsp almond extract to dough.
  • For uniform cookies, use a cookie scoop.
