  • ⅓ cup granulated sugar
  • 6 tbsp melted butter
  • For the Filling:
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, whipped to stiff peaks

  • 1 lb fresh strawberries, hulled and sliced
  • ½ cup strawberry jam
  • 1 tbsp water
  • 1 tsp lemon juice

Instructions

  1. Make the Crust: Mix graham crumbs, sugar, and melted butter. Press firmly into a 9-inch pie plate. Chill for 30 minutes.
  2. Make the Filling: Beat cream cheese until smooth. Add powdered sugar and vanilla, mixing well. Fold in whipped cream gently.
  3. Spread filling into chilled crust. Smooth top with spatula. Refrigerate for 2 hours.
  4. Prepare Topping: Arrange strawberry slices over filling. Heat jam, water, and lemon juice until melted. Brush over strawberries.
  5. Chill for at least 4 hours (preferably overnight) before serving. Garnish with whipped cream if desired.

Notes

  • For a neater slice, dip knife in hot water before cutting.
  • Substitute: Use gluten-free graham crackers or digestive biscuits for the crust.
  • Make ahead: Pie keeps well for 3 days refrigerated (add glaze just before serving).
  • Variation: Add 1 tbsp lemon zest to filling for brighter flavor.
  • For firmer filling, add ¼ tsp unflavored gelatin to cream cheese mixture.
