Cozy Sweet Potato and Apple Soup

A comforting fall soup that combines sweet potatoes and tart apples, infused with the warmth of cinnamon.

  • 2 medium sweet potatoes, peeled and diced
  • 2 apples, peeled and chopped (preferably tart, like Granny Smith)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: cream or yogurt for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté for 5-7 minutes until translucent.
  2. Stir in diced sweet potatoes and chopped apples. Cook for an additional 3-4 minutes, stirring occasionally.
  3. Pour in vegetable broth and sprinkle with ground cinnamon. Bring to a gentle boil, then reduce heat to a simmer.
  4. Cover and simmer for 20-25 minutes until sweet potatoes are tender.
  5. Using an immersion blender, puree the soup until smooth. Adjust consistency with more broth if needed.
  6. Season with salt and pepper to taste. Serve hot with a swirl of cream or yogurt if desired.

Notes

Keep an eye on the garlic to prevent burning. Consider garnishing with toasted pumpkin seeds or paprika.
