  • 2 tablespoons coconut oil
  • 1 medium-sized shallot, diced
  • 2 large garlic cloves, chopped finely
  • 1 teaspoon grated or chopped ginger
  • 3 tablespoons red curry paste
  • 13 ounce can of full-fat coconut milk
  • 1/2 teaspoon fish sauce
  • 1 tablespoon brown sugar
  • 1/4 cup fresh cilantro leaves for garnish
  • 1/4 cup fresh mint leaves for garnish
  • 1 lime, cut into wedges for serving

Instructions

  1. Clean the mussels by rinsing them under cold water and scrubbing the shells gently. Discard any that do not close when tapped.
  2. In a large pot over medium heat, melt the coconut oil. Add diced shallot and garlic, sautéing for about 2-3 minutes until fragrant and translucent.
  3. Stir in the ginger and red curry paste, cooking for another minute to bloom the spices.
  4. Pour in the coconut milk, fish sauce, and brown sugar. Bring to a gentle simmer and let thicken for about 5 minutes.
  5. Add the cleaned mussels, cover the pot, and cook for about 5-7 minutes until the mussels have opened, discarding any that remain closed.
  6. Remove from heat and garnish with fresh cilantro and mint leaves. Serve with lime wedges.

Notes

For added flavor, consider marinating the mussels in lime juice and garlic beforehand. You can also adjust the curry paste to control the spice level.
