Delightfully Sweet Ube Bars

A delightful twist on a traditional dessert combining fluffy rice crispies with luscious homemade Ube Butter and smooth melted white chocolate, perfect for special occasions or everyday treats.

  • 200 g White Chocolate (opt for vegan if needed)
  • 120 g Puffed Rice (try using organic Rice Crispies)
  • 380 g Homemade Ube Butter
  • Optional: A sprinkle of sea salt or crushed nuts for topping

Instructions

  1. In a large mixing bowl, melt the white chocolate over a double boiler or in the microwave (heat in 30-second intervals and stir until smooth). Once melted, add the puffed rice and mix until the rice is evenly coated.
  2. Line a 20 cm (8-inch) square baking tin with parchment paper for easy removal. Spoon the coated rice crispies into the pan, pressing down firmly with a spatula to create a solid base.
  3. Spoon your homemade Ube Butter over the rice crispies and level it with a spatula to create an even layer.
  4. Place the tin in the fridge for 1-2 hours to set until solid.
  5. Once set, remove from the fridge and lift out the parchment paper. Slice the bars into squares or rectangles and serve.

Notes

Always use high-quality white chocolate to avoid a waxy texture. Make sure your butter is at room temperature for easy mixing.
