Refreshing Watermelon Cucumber Feta Salad

A vibrant and refreshing summer salad combining sweet watermelon, crisp cucumbers, and tangy feta cheese, perfect for warm afternoons.

Ingredients

  • 4 cups watermelon, cubed
  • 2 large cucumbers, sliced into half-moons
  • 4 oz good feta cheese, crumbled
  • 1/4 red onion, thinly sliced (optional)
  • 1/4 cup fresh mint leaves, torn
  • 2 tbsp olive oil
  • Juice of 1 lime
  • Pinch of salt
  • Fresh cracked black pepper
  • Optional: Handful of toasted pine nuts or pumpkin seeds

Instructions

  1. Cut watermelon into bite-sized cubes and catch the juice in a bowl.
  2. Slice cucumbers into half-moons about 1/4 inch thick; salt lightly and let sit for 10 minutes, then pat dry.
  3. Crumble feta into chunky pieces.
  4. Toss watermelon and cucumber in a large bowl with feta and mint leaves (add red onion if using).
  5. Drizzle with olive oil and lime juice, add salt and pepper, and gently toss to combine.
  6. Let sit for about 15 minutes to meld flavors before serving, and sprinkle with nuts if desired.

Notes

Letting the salad sit allows the flavors to meld beautifully. Best consumed on the same day for optimal freshness.
