Zucchini Fritters

Golden-brown zucchini fritters with a crispy exterior and tender interior, flavored with garlic and Parmesan. A delicious way to enjoy summer zucchini!

Ingredients

    • 2 medium zucchinis, grated
    • 1 teaspoon salt
    • 1/4 cup flour
    • 1/4 cup grated Parmesan cheese
    • 1 large egg
    • 2 garlic cloves, minced
    • 2 green onions, sliced
    • 1/4 teaspoon black pepper
    • Olive oil for frying

Instructions

  1. Prep zucchini: Grate zucchini using large holes of box grater. Toss with 1 tsp salt and let drain in colander 10 minutes.
  2. Squeeze dry: Wrap zucchini in clean kitchen towel and squeeze out as much liquid as possible.
  3. Make batter: In bowl, combine squeezed zucchini, egg, flour, Parmesan, garlic, herbs, pepper, and paprika.
  4. Fry: Heat oil in skillet over medium heat. Drop 1/4 cup portions of batter, flattening slightly. Cook 3-4 minutes per side until golden.
  5. Drain: Transfer to paper towel-lined plate. Serve warm with lemon wedges and sour cream.

Notes

  • Crispier fritters: Add 1 tbsp cornstarch to batter.
  • Gluten-free: Use almond flour or gluten-free flour blend.
  • Make ahead: Keep warm in 200°F (95°C) oven for up to 30 minutes.
  • Leftovers reheat well in air fryer at 350°F (175°C) for 3-4 minutes.
