  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons truffle oil
  • 1/4 cup shredded Parmesan cheese
  • 1/4 teaspoon salt
  • Chopped fresh parsley

Instructions

  1. Peel and rinse the russet potatoes. Cut into 1/4 inch thick fries.
  2. Soak the fries in ice water for 5 minutes to remove excess starch. Drain and pat dry.
  3. Toss the fries with olive oil to coat evenly.
  4. Air fry the fries at 375°F for 35-40 minutes, shaking the basket every 10-15 minutes.
  5. While cooking, shred the Parmesan cheese and chop parsley.
