Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix dry ingredients: In a large bowl, combine almond flour, coconut sugar, baking soda, and salt.
  3. Whisk wet ingredients: In another bowl, whisk together the egg, melted coconut oil, and vanilla extract until smooth.
  4. Combine: Pour the wet mixture into the dry ingredients and stir until fully incorporated.
  5. Add chocolate chips: Fold in the chocolate chips gently.
  6. Scoop: Using a tablespoon, scoop portions of dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Flatten: Slightly flatten each scoop with a spoon.
  8. Bake: Place in the oven and bake for 10-12 minutes until golden around the edges.
  9. Cool: Let cool on the pan for a few minutes before transferring to a wire rack.

Notes

For a nut-free version, consider using sunflower seed flour. Store cookies in an airtight container for up to 5 days.
