Delicious Apple and Cheddar Soup

A cozy fall favorite, this Apple and Cheddar Soup combines sweet apples and savory cheddar for a warming dish perfect for chilly evenings.

  • 2 apples (peeled and chopped; preferably Granny Smith)
  • 1 onion (chopped; yellow onion recommended)
  • 2 cups sharp cheddar cheese (shredded; Tillamook or Cabot preferred)
  • 4 cups chicken broth (homemade or low-sodium store-bought)
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 2 tablespoons unsalted butter
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add chopped onion and cook until softened (5-7 minutes).
  2. Add chopped apples and thyme; cook for another 5 minutes until apples soften.
  3. Pour in chicken broth, bring to a boil, then reduce to a simmer for about 15 minutes.
  4. Blend the soup until smooth either with an immersion blender or in batches with a standard blender.
  5. Return to heat, stir in shredded cheddar cheese and heavy cream, cooking until melted and creamy (3-5 minutes).
  6. Season with salt and pepper to taste. Serve hot with garnishes if desired.

Notes

For an even richer flavor, use homemade chicken stock. This soup can be stored in an airtight container in the fridge for up to 5 days or frozen for up to 3 months.
