  • For the Cookies:
  • 2¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 1 cup (2 sticks) unsalted butter, softened
  • 1½ cups granulated sugar
  • ½ cup reduced apple cider (see note)
  • 1 large egg
  • 2 tsp vanilla extract
  • For the Glaze:
  • 1½ cups powdered sugar
  • 3 tbsp reduced apple cider
  • ½ tsp ground cinnamon

Instructions

  1. Reduce Cider: Simmer 2 cups apple cider in saucepan until reduced to ½ cup (about 20 mins). Cool completely.
  2. Make Dough: Whisk flour, baking soda, baking powder, salt, and spices. In separate bowl, cream butter and sugar until fluffy. Beat in ½ cup reduced cider, egg, and vanilla. Gradually add dry ingredients.
  3. Chill: Cover and refrigerate dough 1 hour (up to 3 days).
  4. Bake: Preheat oven to 350°F. Scoop 2-tbsp portions onto parchment-lined sheets. Bake 10-12 minutes until edges set.
  5. Glaze: Whisk powdered sugar, 3 tbsp reduced cider, and cinnamon. Drizzle over cooled cookies.

Notes

  • Cider reduction tip: Can be made 1 week ahead and refrigerated
  • For extra flavor: Add ½ cup finely chopped dried apples to dough
  • Storage: Keep in airtight container with parchment between layers
  • Freezing: Freeze unglazed cookies up to 3 months
  • Presentation: Sprinkle with cinnamon sugar before glazing
