Apple Cider Vinegar Braised Chicken

A warm and comforting dish featuring tender chicken thighs braised in a tangy apple cider vinegar sauce, perfect for cozy evenings.

  • 6 bone-in skin-on chicken thighs (or drumsticks)
  • 1/3 cup apple cider vinegar
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 1/2 cups low-sodium chicken broth
  • 2 tablespoons Dijon or whole grain mustard (optional)
  • 2 teaspoons fresh thyme or 1/2 teaspoon dried thyme
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Pat the chicken dry, season with salt and pepper. Sear the chicken skin-side down for 5-6 minutes until golden, then flip and cook for an additional 2-3 minutes. Remove and set aside.
  2. Add onion to the pan and cook until translucent, about 4-5 minutes. Stir in garlic and cook for 30 seconds.
  3. Add apple cider vinegar to de-glaze the pan and simmer for 1-2 minutes.
  4. Stir in chicken broth, mustard, thyme, and optional sweetener. Return chicken to the pan, cover, and simmer for 30-40 minutes until tender.
  5. For extra flavor, transfer the pan to a preheated 375°F oven for 15 minutes to crisp the skin.

Notes

Ensure the chicken reaches an internal temperature of 165°F for perfect doneness. Leftovers can be stored in the fridge for up to 3 days.
