Irresistible Apple Crisp Shortbread Bars

A delightful blend of buttery shortbread, tender apples, and a crunchy oat topping, these bars are a heartwarming dessert perfect for any occasion.

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 3 cups peeled and sliced apples (about 34 medium)
  • 1 teaspoon cinnamon
  • 1/2 cup rolled oats
  • 1/2 cup chopped nuts (optional)
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the flour and salt, mixing until just combined to form a shortbread dough.
  4. Press 2/3 of the dough into the bottom of the prepared baking dish.
  5. Mix the sliced apples with cinnamon and brown sugar until well coated.
  6. Spread the apple mixture evenly over the shortbread base.
  7. Combine the remaining dough with oats and nuts (if using), and crumble it over the apple filling.
  8. Bake for about 30-35 minutes, or until the topping is golden brown and bubbly.
  9. Allow to cool slightly before cutting into bars.
  10. Serve warm, topped with a scoop of vanilla ice cream if desired.

Notes

Let the bars cool before cutting to avoid messy slices. These bars can be made in advance and served warm or at room temperature.
