Delightfully Fluffy Apple Ricotta Cake

A light and fluffy Apple Ricotta Cake filled with sweet apples and creamy ricotta, perfect for any occasion.

  • 4 large eggs
  • 3/4 cup sugar
  • 1 cup ricotta cheese (whole milk)
  • 1 tsp vanilla extract
  • 3/4 cup olive oil
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 2 cups almond meal (or almond flour)
  • 1 tbsp baking powder
  • 4 apples (Granny Smith or Honeycrisp)
  • 4 tbsp brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan by lightly spraying it with cooking spray.
  2. Slice the apples into thin, even slices.
  3. Mix the eggs, sugar, ricotta cheese, and vanilla extract until smooth and creamy.
  4. Incorporate the olive oil, salt, and cinnamon, mixing well.
  5. Fold in the almond meal and baking powder until just combined.
  6. Add slices from three of the apples into the batter.
  7. Bake the batter evenly in the prepared pan, arranging the remaining apple slices on top and sprinkling with brown sugar.
  8. Bake for about 60 minutes, or until golden brown and a knife inserted into the center comes out clean.

Notes

For added richness, substitute half the olive oil with melted butter. Watch the apples to ensure they don’t darken too much while baking.
