  • 1/2 cup brown sugar (packed)
  • 1 cup vegetable oil
  • 2 tsp vanilla extract

  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 10-inch round cake pan with cooking spray or parchment paper.
  3. Peel, core, and dice the apples.
  4. Mix the wet ingredients in a stand mixer: combine eggs, sugar, brown sugar, vegetable oil, and vanilla extract.
  5. Combine the dry ingredients in a medium bowl.
  6. Gradually add dry ingredients to the wet mixture and stir until just combined.
  7. Fold in the apples and walnuts until evenly distributed.
  8. Spread the batter evenly in your prepared pan.
