Apple Walnut Salad

A crisp and refreshing salad featuring sweet apples, crunchy walnuts, and tangy cheese tossed with fresh greens and a honey mustard vinaigrette.

Ingredients

  • Salad Base:
    • 6 cups mixed greens (spinach, arugula, or spring mix)
    • 2 medium apples (Honeycrisp or Gala), thinly sliced
    • 1/2 cup walnuts, toasted
    • 1/4 cup red onion, thinly sliced
    • 1/3 cup crumbled blue cheese or feta (optional)
    • 1/4 cup dried cranberries
  • Honey Mustard Vinaigrette:
    • 1/4 cup olive oil
    • 2 tbsp apple cider vinegar
    • 1 tbsp honey
    • 1 tbsp Dijon mustard
    • 1/2 tsp salt
    • 1/4 tsp black pepper

Instructions

  1. In a dry skillet over medium heat, toast walnuts for 3-4 minutes until fragrant. Set aside to cool.
  2. In a small bowl, whisk together all vinaigrette ingredients until well combined.
  3. In a large salad bowl, combine mixed greens, apple slices, toasted walnuts, red onion, and dried cranberries.
  4. Drizzle with dressing and toss gently to coat.
  5. Sprinkle with cheese if using and serve immediately.

Notes

  • To prevent browning, toss apple slices with 1 tsp lemon juice before adding to salad.
  • For extra crunch, add 1/4 cup celery slices.
  • Make it vegan by omitting cheese or using dairy-free alternative.
  • Dressing can be made ahead and stored in refrigerator for up to 1 week.
