  • ½ cup (113g) unsalted butter, softened
  • ½ cup (100g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • 1 cup (250g) unsweetened applesauce
  • 1 tsp vanilla extract
  • For Streusel (Optional):
  • ¼ cup (30g) flour
  • ¼ cup (50g) brown sugar
  • ½ tsp cinnamon
  • 2 tbsp cold butter
  • ¼ cup (30g) chopped walnuts (optional)

Instructions

  1. Prep: Preheat oven to 375°F (190°C). Line 12-cup muffin tin with liners or grease well.
  2. Dry ingredients: Whisk flour, baking soda, spices, and salt in medium bowl.
  3. Cream: Beat butter and sugars until fluffy. Beat in egg, then applesauce and vanilla (mixture may look curdled).
  4. Combine: Gradually mix in dry ingredients until just combined (don’t overmix).
  5. Streusel: Mix flour, sugar, cinnamon. Cut in butter until crumbly. Stir in nuts if using.
  6. Bake: Divide batter evenly among cups. Sprinkle with streusel. Bake 18-22 minutes until toothpick comes out clean.
  7. Cool: Let cool 5 minutes in pan, then transfer to wire rack.

Notes

  • For extra moisture: Substitute ¼ cup applesauce with Greek yogurt
  • Healthier option: Replace half flour with whole wheat flour
