½ cup (113g) unsalted butter, softened
½ cup (100g) brown sugar
¼ cup (50g) granulated sugar
1 large egg
1 cup (250g) unsweetened applesauce
1 tsp vanilla extract
For Streusel (Optional):
¼ cup (30g) flour
¼ cup (50g) brown sugar
½ tsp cinnamon
2 tbsp cold butter
¼ cup (30g) chopped walnuts (optional)
Instructions
Prep: Preheat oven to 375°F (190°C). Line 12-cup muffin tin with liners or grease well.
Dry ingredients: Whisk flour, baking soda, spices, and salt in medium bowl.
Cream: Beat butter and sugars until fluffy. Beat in egg, then applesauce and vanilla (mixture may look curdled).
Combine: Gradually mix in dry ingredients until just combined (don’t overmix).
Streusel: Mix flour, sugar, cinnamon. Cut in butter until crumbly. Stir in nuts if using.
Bake: Divide batter evenly among cups. Sprinkle with streusel. Bake 18-22 minutes until toothpick comes out clean.
Cool: Let cool 5 minutes in pan, then transfer to wire rack.
