Creamy Asparagus Soup

A delightful and easy recipe for homemade creamy asparagus soup that bursts with fresh flavors.

  • 1 lb asparagus, trimmed and cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until fragrant and translucent.
  3. Stir in the asparagus pieces and cook for another 4-5 minutes until slightly tender.
  4. Pour in the vegetable broth and bring to a boil. Lower the heat and let it simmer for 15-20 minutes.
  5. Using an immersion blender, carefully puree the soup until smooth.
  6. Stir in the heavy cream and allow it to warm through for about 2-3 minutes.
