Fresh and Flavorful Asparagus Soup

A comforting asparagus soup that celebrates the flavors of spring with a creamy texture and fresh ingredients.

  • 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Lemon juice (optional, for serving)

Instructions

  1. In a large pot over medium heat, add the olive oil. Once hot, add the chopped onion and minced garlic. Sauté for about 3-5 minutes until softened and fragrant.
  2. Add the asparagus pieces and vegetable broth to the pot. Bring to a boil, then lower heat and simmer covered for 10-15 minutes, or until asparagus is tender.
  3. Remove from heat and carefully blend the soup until smooth using an immersion blender.
  4. Stir in the heavy cream, then season with salt and pepper to taste. Return to low heat to warm through for 2-3 minutes.
  5. Ladle the soup into bowls and finish with a splash of lemon juice. Serve immediately.

Notes

Store leftovers in an airtight container for 3-4 days. For a vegan option, substitute heavy cream with coconut milk.
