Autumn Salad with Apple Cider Dressing

A vibrant autumn salad that combines mixed greens with apples, pears, crispy bacon, and a tangy apple cider dressing, perfect for holiday feasts or weeknight dinners.

Ingredients

Scale
  • Mixed greens (spinach, arugula, kale)
  • 1 cup pecans
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 apples, diced (Honeycrisp or Granny Smith)
  • 2 pears, diced (Bartlett or Anjou)
  • 4 strips of bacon, cooked and crumbled
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup apple cider
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Toast the pecans in a skillet with sugar and cinnamon over medium heat for 5-7 minutes until caramelized.
  2. Make the dressing by whisking together apple cider, olive oil, and apple cider vinegar, then add salt and pepper to taste.
  3. In a large bowl, combine mixed greens, diced apples, diced pears, crumbled bacon, feta cheese, and cooled pecans.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately to enjoy the freshness.

Notes

For best results, let ingredients come to room temperature before using. This salad is best enjoyed fresh but can last for about 2 days in the fridge without dressing.
