Zesty Avocado Shrimp Ceviche

A refreshing twist on a classic ceviche, combining creamy avocado, tangy lime, and succulent shrimp for a vibrant and flavorful dish.

  • 1 pound cooked shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup diced tomatoes
  • 1/2 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shrimp, diced avocados, diced tomatoes, finely chopped red onion, minced jalapeño, and freshly chopped cilantro.
  2. Squeeze the juice of two limes over the mixture.
  3. Gently toss all the ingredients together, ensuring everything is well coated. Sprinkle in salt and pepper to taste.
  4. Cover and chill the ceviche in the refrigerator for at least 30 minutes.
  5. Serve chilled as an appetizer, pairing with crispy tortilla chips.

Notes

Avoid over-mixing to keep the avocado intact for creaminess. Best enjoyed fresh but can last in the fridge for up to 24 hours.
