Irresistible Bacon Cheddar Gnocchi Soup

A warm and comforting soup made with crispy bacon, tangy cheddar cheese, and tender gnocchi, perfect for chilly evenings.

  • 6 slices of bacon, chopped
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 pound of gnocchi
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cups chopped fresh spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter

Instructions

  1. In a large pot, over medium heat, cook the chopped bacon until crispy, about 5-6 minutes. Remove the bacon with a slotted spoon, leaving the grease in the pot.
  2. Add diced onion to the pot and cook until translucent, approximately 5 minutes. Stir in minced garlic and cook for 1 additional minute until fragrant.
  3. Sprinkle flour over the cooked onions and garlic, stirring for 1-2 minutes to form a roux.
  4. Gradually whisk in the chicken broth, ensuring there are no lumps. Increase heat to medium-high until the mixture simmers.
  5. Stir in heavy cream, dried thyme, and smoked paprika; let it simmer.
  6. Add gnocchi and cook for 3-5 minutes, until they float to the top.
  7. Lower the heat and stir in shredded cheddar cheese until melted and smooth.
  8. In a separate pan, heat olive oil and sauté spinach until just wilted, then add to the soup.
  9. Stir the reserved crispy bacon back into the pot and simmer for a few minutes.
  10. Ladle the soup into bowls, sprinkle with extra bacon, and enjoy!

Notes

Make sure your butter is at room temperature to avoid clumping when added to the hot broth.
