  • 6 large eggs (room temperature)
  • 1/4 cup milk (whole or 2%, or dairy-free alternative)
  • 1 cup cooked potatoes, diced
  • 4 strips of bacon, cooked and crumbled
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until combined, about 1 minute.
  3. Heat olive oil in an oven-safe skillet over medium heat for about 2-3 minutes.
  4. Add the diced potatoes and crumbled bacon to the skillet, stirring together.
  5. Pour the egg mixture evenly over the potatoes and bacon.
  6. Cook without stirring for about 5-7 minutes, until edges begin to set.
